Cilantro-lime Brown Rice

This is a great recipe to make and goes well with all kinds of other dishes. I always use brown rice when I cook rice for its extra health benefits….it has more fiber and helps lower cholesterol. Sign me up!  Don’t know about you but the saying “every penny counts” comes to reference for me here, I never waste my change. Same applies for me and my health. Every little benefit counts. Rack up those health benefits… Rack City.

Serving size: follow package direction on the rice. This particular recipe I followed the package for 4 servings.

The magic that makes it taste good:

• 1 cup brown rice

• water 2 cups

• 1 lime juice, fresh

• cilantro, fresh, chopped

• salt to taste

•pepper to taste

• cumin

How to make magic:

1. When adding the water portion to the rice, add all the lime juice into the measuring cup then fill the rest with the correct amount of water. Continue to cook rice as package states.

2. Add spices (keep cilantro to the side) to the rice and stir before putting on the lid to simmer.

3. Once rice is done, let sit for a few minutes, fluff with a fork and add the fresh cilantro.
