Okay, so let’s take a second to appreciate how delicious and nutritious avocados are. They are full of healthy fats that help keep that heart pitter pattering and contains more potassium than a banana! I love avocados for their versatility. I have used and eaten them by themselves, in salads, tacos & other hispanic dishes, breaded and fried, in an egg roll, in pastries and desserts……and it’s always a hit! My absolute favorite way to use avocados though, is guacamole. I can munch on chips and guac all day. Below is my recipe for guacamole, which I love eating with my Chili-Lime Taquitos!
When picking your avocados a good trick to get beautiful green, just ripe avocados is to find one that is soft but still has shape and a firmness to it. But the real trick is to remove that little stem stub at the top of the avocado and if it looks healthy and light brown or green showing through, you’ve got a winner!
The magic that makes it taste good:
- 3 Avocados
- 1 Red onion, minced
- Tomato, diced
- 1 Jalapeno
- Lime Juice, fresh
- Cilantro, fresh
- Salt & Pepper
- Garlic Powder
- Onion Powder
How to make magic:
- Half avocados, deseed, and place in a bowl. Mash Avocado with a fork to desired chunkiness. I like mine more smooth because I add other toppings.
- Add lime juice, salt, pepper, and spices to your liking and mix.
- Chop up the onion, tomato, jalapeño, and cilantro. Add however much you like, I LOVE spicy food so I use the whole jalapeño, if spice isn’t your thing add a little, or none at all. Cilantro is also a favorite herb of mine so I tend to add extra. Adapt it to your likings.
- Once everything is added, mix it up, taste it, add more if need be of an ingredient, then put it in the fridge for about 10-15 min before eating to let the flavors really come together.
