Sweet & Spicy Chicken with Pineapple Coconut Fried Rice & Spicy Kale, Apple, & Cabbage Slaw

So bae and I were watching “Fuck, That’s Delicious” with Action Bronson and on the episode they were eating at an Asian joint where they took the rice and mashed it down and got the most yummy golden brown crust on the bottom of the rice…..We love a good char on our food and this was right up our alley!! I had to get in the kitchen and try a recipe out! I took note of the random assortment of ingredients I had and created this deliciousness! Enjoy guys, this one is freaking killer.

The magic that makes it taste good:

  • Chicken (I used breast tenderloin but the breast works too)
  • Brown rice
  • Green sweet peas
  • Red onion, chopped
  • Pineapple, chopped (Keep the juice!)
  • Coconut flakes, unsweetened
  • Cabbage, sliced thin
  • Kale, de-stemmed chopped
  • Honey crisp apple, chopped
  • Jalapeno, chopped fine
  • Plain yogurt
  • Lemon juice
  • Honey
  • Sambal Oelek (ground chili paste)
  • Soy Sauce
  • Rice vinegar
  • Coconut Spread/oil
  • Salt
  • Pepper
  • Ginger powder

How to make magic:

  1. Marinate your chicken in the soy sauce, rice vinegar, sambal oelek, honey, pepper, and ginger powder. Let marinate for at least 2 hours, I marinate mine for about 5 hours.
  2. Cook your brown rice according to its packing directions and how many your serving. set aside when finished to cool.
  3. Next is the sauce for the coleslaw. Grab a bowl, and add the plain yogurt, salt, pepper, lemon juice, jalapeño, honey, and stir until it comes together. refrigerate until later.
  4. Prepare the sweet peas, pineapple, and red onion and set aside. (this will be for the rice).
  5. In a bowl, add the cabbage, kale, and apple. Start adding the sauce you have saved in the fridge to the coleslaw and combine. add more salt and pepper to taste if need be. refrigerate and save for plating.
  6. If you have a wok use it! if not it will still work with a sauté pan. Get your pan hot, add coconut oil/spread, and cook your red onions for about 1-4 min. Add a little more oil or spread and toss in your brown rice, green peas, and pineapple. stir and spread rice across the pan evenly. pat down gently, turn your heat to a medium to a high low, and allow rice to brown on the bottom. The key is to get a good crunch but don’t burn it! Remove from the heat, and add coconut flakes, and a splash of soy sauce and fresh pineapple juice.
  7. While the rice is frying, Place a pan over medium heat, add coconut spread or oil. once hot, cook chicken for about 8-15 min depending on the thickness of your bird.
  8. Get a pretty plate, and throw down some rice, chicken, and a side of coleslaw and enjoy!
